SUPER EASY TAMALE PIE

Super Easy Tamale Bake

 

In our multicultural family home we love to try new and delicious cuisines. Here is an incredible recipe we put together for a tamale pie.  This recipe is easy to make and hearty for Fall and Winter evenings.  Enjoy!

SUPER EASY TAMALE PIE

WHAT YOU'LL NEED:

CORNBREAD BOTTOM LAYER

1 Box of Jiffy cornbread mix

1 Egg

1/2 Cup of sour cream (we use light sour cream)

1 Can of corn




MEAT

1Lb Ground meat of choice (we use ground turkey)

1/4 Cup of diced yellow onion 

1 Clove of minced garlic

1 Teaspoon of oregano

2 Tablespoons of chili powder

1 Tablespoon of ground cumin

1 Teaspoon of salt

1 and 1/2 Teaspoon of smoked paprika

1 Teaspoon of ground coriander




TAMALE PIE

1.5 Cups of shredded cheese of your choice (we use Kraft 2% Mexican and jalapeno jack)

1 Can of Enchilada Sauce




OPTIONAL TOPPINGS

Guacamole

Cilantro

Sour cream

Salsa

Hot Sauce

Lettuce and/or tomatoes







DIRECTIONS:

1.) Preheat oven to 400 degrees F.

2.)  Wisk together jiffy mix, egg, and sourcream. Fold/add in the can of corn.

3.) Pour into lightly sprayed/greased 9 inch baking pan or cast iron skillet. Bake until set about 20-25 mins.

4.) While the cornbread bakes combine meat (ground turkey) with spices, onion and garlic. Sautee in a skillet over medium heat until brown approximately 10 minutes. Drain  and set aside.

5.) Once the cornbread is done reduce the oven to 350 degrees F. Pour can of enchildad sauce on top.  Top with ground turkey and shredded cheeses.

6.) Bake in oven for 20 minutes.

7.) Let sit for 10 minutes. Add additional toppings if desired. Enjoy!
