This is a recipe our multicultural family loves. We serve this cauliflower and potatoes dish/Aloo Gobi with chicken kebabs, naan, and rice.  It is excellent for lunch, brunch, or dinner!

ALOO GOBI RECIPE

WHAT YOU'LL NEED:

1 head of cauliflower

1 potato diced into small squares
1/4 cup of extra virgin olive oil and two tablespoons 

1 tablespoon of garlic or garlic paste

1 tablespoon of ginger

1 teaspoon of cumin

1/4 teaspoon of turmeric

1 teaspoon of coriander

1.5  tablespoons of curry powder

1/4 teaspoon of chilli powder

2 tablespoons of water

Salt to taste

Optional

1/4 cup of yellow onion diced
1-2 tablespoons of Serrano peppers

Cilantro


DIRECTIONS:

1.) Set oven to 400 Degrees. Cut cauliflower into small florets. Set aside and place into a large bowl along with diced potatoes, onions (optional) and serrano peppers (optional).

2.) Mix all of the spices and garlic together in a food processor. Slowly add the olive oil and then water.  Once completely mixed set aside 2 tablespoons of spice mixture and pour the rest into the bowl of cauliflower and potatoes. Mix well.

3.) Place into 9-13 inch sprayed/greased baking pan. Cook for approximately 30 mins. Make sure to stir halfway through and base/coat with the 2 tablespoons of spice mixture so that the cauliflower and potatoes roast evenly.

4.) Serve immediately. Top with chopped cilantro if desired.
